As I'll be staying w/ my riding buddies, we really don't need the quaintness of the inns I see recommended. Any motels/hotels in the vicinity?

You can check out lodging options at the Killington and Sugarbush ski resorts. Their summer rates may be resonable. Killington is just south of the course, while Sugarbush is on the course but about 20-25mi north of Amee Farm, where the Chet Warman ride starts.

Can one assume that there is a McDonald's in Killington or nearby that opens very early and serves pancakes or other easily digestable fare ?

There is a McDonalds in Rutland, about 10mi to the west of Killington on Rt 4 as you head into Rutland. There would be more hotel options there too, if you don't mind staying further away from the course.

We stayed this past weekend at the Brandon Motor Lodge ( in Brandon of course ). Simple, very clean, friendly and economical.
